Market Butchers

I was walking around a very busy and vibrant market.  I spoke to one stall and they said they would get what i was looking for.  I followed them into the back - where there was a big butcher's kitchen.  There was a very large, fat butcher, wearing a white apron and hat.  He picked up a part of a pig carcas and put the limbs into a metal grinder.  There was blood everywhere and i felt some specks of blood may have splashed onto me.  I thought i need to go and wash it off.  I then saw the butcher pick up the remaining part of the pig - its decapitated head!
